It might have been something I picked up on the flight, but when I got to the Leadership Summit in San Diego earlier this month, I realized I had a cold.

I HATE being sidelined, but it wasn’t for long. Just like every grandmother throughout history has recommended, a bowl of warm chicken soup came to the rescue, making me feel SOOO much better – and giving me back the energy I needed to power through the Summit!

Soups and stews are like that, and with autumn here, it felt like the perfect time to share some healthy, totally yummy Paleo soup recipes to help stave off chilly winds and give your immune system a big boost before winter settles in.

I’ve included some spicy, Caribbean-inspired (not so Fall) soups that celebrate the traditional flavors of the islands, as well as a cold gazpacho that’s perfect for days when cooking is just out of the question.

Each low-carb recipe focuses on lean protein and veggies, and in most cases, they’re perfectly Paleo and gluten-free, or can be easily modified to fit either lifestyle.

Paleo-chicken-soup-perchancetocook-9-1024x768Paleo Chicken Soup (Perchance to Cook) – A blend of spices brings big, bold flavor to this Paleo soup, featuring lean chicken and a mix of both starchy and non-starchy fresh veggies.

Watermelon-Gazpacho_2Watermelon Gazpacho (Teaspoon) – If you’re living somewhere sunny and warm, and have better things to do than sweat in front of a stove, this spicy-sweet gazpacho is perfect. It features a mix of fruit and veggies, all tossed into a blender and mixed until smooth. Easy-peasy.

Ginger-and-Spring-Onion-Egg-Drop-Soup-www.asaucykitchen.com_Ginger and Spring Onion Egg Drop Soup (A Saucy Kitchen) – This nutrient-dense soup is also gluten-free, but it packs lots of flavor and fiber, thanks to pungent fresh ginger, zucchini noodles and eggs for protein.

WorldsBestTomatoSoup-3Classic Tomato (Sprouted Routes) – It’s Paleo, gluten-free and vegan, but this play on classic tomato soup is super-tasty, because it starts with roasted tomatoes as the base. Roasting caramelizes the tomatoes, bringing out the same big burst of flavor you’d get from cooking them all day like a Sunday sauce, without the time investment.

Pumpkin-Chicken-and-Chorizo-ChiliPumpkin Chicken Chorizo Chili (Wholesomelicious) – Pumpkin is not only flavorful, it’s full of vitamin A, so when canned pumpkin is available, you should find as many ways as possible to use it. This creamy, spicy soup is cooled with slices of avocado and minced cilantro to counter the heat of jalapenos and chorizo.

IMG_8168Caribbean Fish Stew (Immaculate Bites) – There are a few steps to this delicious fish stew, but it’s so worth the effort. You can use virtually any white fish you like. The spicy sauce infused with the heat of a Scotch bonnet pepper is what makes the dish special.

Bacon-Brussel-sprout-and-Potato32Bacon, Veggie & Potato (Cotter Crunch) – It’s hard not to love anything with bacon, and this lightened-up soup is no exception. The gluten-free dish takes advantage of seasonal veggies (Brussels sprouts and potatoes, but you can swap out sweet potato or squash for the potato), which have more nutrients because they’re picked at their peak, making them special by adding smoky bacon. The soup can cook in the crock pot, so it’s easy and flavorful.

Sausage-and-Kale-Soup-www.asaucykitchen.com_2Sausage and Kale Soup (A Saucy Kitchen) – Kale and carrots make this gluten-free soup super-healthy, while sausage adds bulk. The broth is infused with ginger, garlic, spices and lime, so it’s spicy and citrusy with a bit of umami. So good!

IMG_8132-2Autumn Beef & Vegetable Stew (Keto Diet) – Your whole house will smell amazing when you make this slow-cooker beef stew, a low-carb dish that features the under-appreciated rutabaga and offers a hint of cinnamon, which gives hikes the depth of flavor.

rsz_pollosopa5-2Sopa de Pollo (Naked Cuisine) – This south-of-the-border chicken soup is spicy, creamy and super filling thanks to chicken paired with both sweet potato and winter squash. Avocado, cilantro and lime wedges counter the heat from the chipotle.

roasted-butternut-and-red-pepper-soup-1024x797Butternut Squash & Red Pepper (Paleo Diet and Fitness) – This creamy soup seems decadent, but it’s anything but. It’s creamy and colorful, the perfect dish to exemplify the principle of eating with your eyes first.
